An Easy Easter Meal Plan (last-minute friendly 🐣)


Hi Reader,

How is it already April? It feels like this year is moving at warp speed, and I swear I just took down the Christmas decorations.

If you’re feeling like life is rushing by and Easter totally crept up on you, you’re in good company. I’ve had plenty of holidays where I’m pulling a menu together at the last minute and just hoping it all works out.

So I put together an easy Easter meal plan that still feels special, but won’t have you running all over town or stuck in the kitchen all day. These are simple, reliable recipes that still make it feel like a holiday.

Make the whole lot, or pick your favorites. These are some of my go-tos for this time of year.

The Main

Baked Salmon In Foil

This is my go-to when I want something that feels fresh and a little fancy without the effort. Everything cooks right in foil, so cleanup is easy, and the lemon and dill make it perfect for spring.

Sides

Cheesy Instant Pot Scalloped Potatoes

Classic comfort food, but faster. The Instant Pot does most of the work, and you still get that rich, creamy, cheesy goodness everyone expects on Easter.

Maple Bacon Brussels Sprouts

These are always a hit, even with people who think they don’t like Brussels sprouts. Sweet, salty, and crispy around the edges. They come together quickly in one pan.

Pear, Arugula & Goat Cheese Salad

Something fresh to balance everything out. It’s light, a little sweet, a little tangy, and takes just a few minutes to throw together.

Desserts (Pick your poison!)

Dirt Cake

Fun, nostalgic, and especially great if you’ve got kids around.

Brown Butter Ooey Gooey Bars

Rich, buttery, and super low effort thanks to a cake mix base.

Carrot Cake Cookies With Coconut Pecan Cream Cheese Icing

A mouthful, I know, but carrot cake is a classic, and this icing takes these cookies over the top. This is a more classic Easter flavor, but in an easier, more casual form.

Vanilla Cake With Strawberry Filling & Whipped Cream

Light, fresh, and perfect if you want something that feels a little more traditional for spring

If You're Doing Brunch Instead...

Quiche Florentine

This one is a little more involved, but you can use a store-bought crust to make it infinitely easier. Simple, savory, and perfect to make ahead.

Smoked Salmon, Cream Cheese & Everything Bagel Pizza

This is one of my favorites when I want something a little different that looks fancy, but is still easy. And, it's so good!!

If You Have A Little Extra Time...

Rosemary Parmesan Bread

Ok, so maybe homemade bread doesn't belong in an "easy Easter menu" email, but this truly is easy and only requires a bit of planning for the rise. This is mostly hands-off and makes your kitchen smell amazing. If you're up for it, I highly recommend!

And Don't Forget The Leftovers!

Easy Lemon Salmon Pasta

If you make the salmon and happen to have leftovers, this is one of my favorite uses for it! Quick, fresh, and doesn’t feel like leftovers.

Easy Ham Salad

If you do make a classic ham, this nostalgic recipe is the perfect use for leftovers. Great for sandwiches the next day (and all week!).
