Chicken Piccata, but make it meatballs



Hi Reader,

I love chicken piccata as much as the next person, but sometimes I just do not feel like dealing with chicken breasts. The pounding, the dredging, the hoping they don’t turn dry before dinner hits the table.

So I turned it into meatballs instead.

And let me tell you - I may like this version even better.

These Chicken Piccata Meatballs have all the good stuff: tender ground chicken meatballs, Parmesan, lemon, capers, garlic, shallot, and a buttery white wine sauce that tastes like something you’d order at a restaurant but is totally doable on a weeknight.

The meatballs are light and flavorful, with chopped capers and lemon zest mixed right in, so you get that bright, briny piccata flavor in every bite. Then they’re simmered in a lemon-caper sauce that’s buttery, tangy, and basically begging to be spooned over pasta, rice, mashed potatoes, or a big hunk of crusty bread.

The sauce alone is worth making this one.

And unlike classic chicken piccata, there’s no fussing with thin pieces of chicken or worrying about overcooking anything. Just roll the meatballs, brown them, make the sauce, and let everything come together in one pan.

It’s cozy, a little fancy, and exactly the kind of dinner I want when I’m craving something bright and comforting at the same time.

A few ways to serve them:

  • Over pasta, obviously. (Orzo is a favorite!)
  • With roasted asparagus or a simple green salad.
  • On top of mashed potatoes, if you want to go full comfort food. (These Boursin Cheese Mashed Potatoes are so good here)
  • Or with crusty bread to soak up every last bit of sauce. Try my Rosemary Parmesan Bread for an easy homemade version!
