Crispy corn nuggets - the easiest, crispiest summer side!


Hi Reader,

When I was a teenager in Illinois, I spent about a month detasseling corn. If you didn't grow up around cornfields, that's the job where you walk the rows in the July heat and pull the tassel off the top of every stalk. It is hot, buggy, and pretty miserable, and by the end of that summer, I was convinced I never wanted to look at corn again.

Luckily, that did not last.

These days, fresh summer sweet corn is one of my favorite things to cook with, and right now my obsession is turning it into crispy little corn nuggets. Golden and crunchy on the outside, sweet and tender in the middle, with cheddar, green onion, and a little paprika worked into the batter. They fry up in about a minute and they disappear off the plate faster than I can set it down.

They come together fast and are made for dipping. Sriracha mayo and ranch are the favorites at our house, with honey mustard a close third.
