Hi Reader,

How is it already Labor Day weekend?

I know summer doesn't *officially* end for a few more weeks, but Labor Day always feels like the turning point to me. School is back, the evenings are getting a little shorter, and I'm already starting to see pumpkin everything creeping into the stores.

But I'm not quite ready yet.

We still have peaches. We still have sweet corn. And we still have a perfectly good long weekend ahead of us. So if you're planning a cookout, having a few friends over, or just hanging out at home with the family, here are a few easy recipes to help you squeeze every last bit out of summer.

Start with something snacky

​Creamy Jalapeno Corn Dip​

This one takes about 10 minutes to throw together and doesn't require turning on the oven. It's creamy, a little spicy, loaded with corn, peppers and cheese, and very hard to stop eating once the tortilla chips come out.

Throw this on the grill.

​Grilled Lemon Chicken​

The lemon-garlic marinade takes just a few minutes to make, and then the fridge does most of the work. Grill the chicken when you're ready to eat and you've got a really easy main dish without heating up the kitchen.

Add a couple of easy sides

​4-Ingredient Pasta Salad​

This is exactly the kind of recipe I want for a holiday weekend: four ingredients, easy to make ahead, and great for feeding a group.

And while you can still find good peaches

​Peach Caprese Salad​

Juicy peaches + tomatoes + fresh mozzarella + basil + crunchy pistachios. It's basically the end of summer piled into one big bowl, and I'm trying to eat as much of it as possible before peach season disappears.

And obviously, dessert

​Easy Peach Cobbler With Cake Mix​

Fresh peaches underneath a buttery golden cake-mix topping. Serve it warm with vanilla ice cream and call it a very successful end to summer.
