My 3 favorite soups for these last weeks of winter


Hi Reader,

Late winter always keeps us guessing — warm, sunny days followed by chilly nights here in Colorado. But whether you're enjoying a hint of spring or still digging out from a snowstorm (hello, New York!), soup is one of those meals that always hits the spot. These cozy recipes are perfect for unwinding at the end of a long day, and will keep you going strong until we start to see those first signs of warmer weather springing up.

These are my favorite end-of-winter soups to enjoy right now.


#1 Italian Penicillin Soup

Perfect to beat the winter blues, and maybe even cure you of a winter cold, this dish is named Penicillin soup for a reason. It's a twist on the classic chicken noodle soup and is loaded with chicken, veggies, pastina pasta, and Parmesan. Delicious and ultra comforting.


#2 Creamy Lemon Chicken Florentine Soup

This easy one-pot dish has a slightly Italian, slightly Mediterranean feel with lemon, chicken, spinach, and a light, creamy broth, making this soup both light and filling. Add a few shreds of Parmesan and a sprinkle of bacon to make this especially delicious.


#3 Italian Sausage, Kale And White Bean Soup

I LOVE this hearty, healthy soup. It's a favorite at our house, made with mild Italian sausage, creamy cannellini beans, and nutrient-rich leafy greens like kale (or spinach, if you'd like). Add some Parmesan for a dash of salty flavor, and it's like Italy in a bowl. Make sure you have some crusty bread to soak up the broth for this one!
