The easiest summer dinner on our grill lately...

Folks, I don't know where you're reading this from, but if you're anything like me, you're probably melting. I'm visiting my mom in central Illinois this week and man, is it HOT! Before it gets too warm, Maya (my pup!) and I have been sneaking out for early morning walks down this quiet farm road... The corn is taller than I am, the cicadas are deafening, and by 10 a.m. I'm already looking for shade.

The heat is exactly why I don't want to spend any more time in the kitchen than I have to this time of year. That's also why this grilled lemon chicken has been on repeat. It marinates while you do something else, cooks in just a few minutes on the grill (blessedly, outside!), and keeps the house nice and cool. I usually throw on some zucchini, corn, or whatever vegetables are in season while I've got the grill going. Grab the recipe and make it this weekend for an easy backyard dinner.

Grilled Lemon Chicken

One thing I've been pairing with it lately is my new Whipped Feta Dip.

While this dip works great as an appetizer, it's amazingly good spread onto a plate and topped with the sliced grilled chicken, roasted vegetables, or even scooped up with warm pita. Add a simple green salad, and you've got one of my favorite easy summer meals.
