Ground Turkey Stuffed Peppers - The High Protein Dinner Dreams Are Made Of

So summer is well on its way (how is it April already??) and if you're like me, you might be starting to crave meals that feel a little lighter, a little fresher, and a little more protein-packed.

Over the past few weeks, I've been really trying to increase my protein, cut back a bit on carbs, and find easy dinners that check three boxes:

  1. They have a solid protein count without being too heavy.
  2. They're something I can feed my family without complaints.
  3. They don't take forever, but still taste delicious.

This is harder than it sounds! But this lightened-up stuffed peppers recipe totally fits the bill. A breakaway from classic stuffed peppers, which use ground beef and white rice, this recipe turns to lean ground turkey for the protein and swaps the rice for a lighter, protein-rich quinoa. Brilliant, if I do say so myself!

The best part is, you barely notice the difference (and my family gobbles it right up!).

I've been loving this recipe, and if you're also trying to eat a little healthier before summer, I think you'll love it too.

Bonus - I almost always end up with extra turkey-quinoa filling, which basically gives you a second dinner. Pile it over pasta (or spaghetti squash! or zoodles!), spoon it onto a baked potato, or tuck it into a tortilla. It will make your week that much easier!
